Hello!! Do you think of Monday as the start of the week or the second day of the week? I think of it as a fresh day, fresh start and that is why I always do my meal planning on Mondays!
Monday – Kabanoss Sausage and Creamy Cheesey Pasta
Tuesday – BBQ Chicken and Pineapple Taquitos
Wednesday – Salsiccia Sausage, Mushroom, and Onion Kabobs with Rice
Thursday – Greek Chicken Plate – Thinly sliced lettuce, tomato, french fries, and tzatziki with marinated chicken
Friday – Chicken Nuggets and French Fries – request by Mr. H
Saturday – Spicy Bacon Cottage Mac n’ Cheese
Sunday – ?

This is a recipe that is the perfect entrance into Spring cooking. It is also very flavorful and easy to make!
Ingredients:
1 lemon
Small bunch of parsley
2 Chicken Breasts
Oil – Olive Oil would obviously be great but for us poor folk good old rapsolja works fine
Gräddfil – Or creme fraiche or greek yogurt etc
White wine vinegar
Salt and Pepper
(if you are a big garlic fan a small clove grated would be great)
What to Do:
Pre-heat oven to 400 C
In a small bowl zest the lemon and then squeeze out the juice
Finely chop the parsley and add to bowl
Season with Salt and Pepper and a splash of white wine vinegar
In a baking dish lay out chicken breast and lightly rub with oil
Rub on half of the lemon parsley mixture and bake until cooked through
(if using a glass baking dish add a small amount of liquid to dish before baking)
Mix remaining lemon parsley mixture with gräddfil and chill
Serve chicken with sauce and mashed potatoes

You are so much better at meal planning than me. I like it when i do it, but I can never get my act together enough to actually plan!
It just takes practice and having to walk home your groceries up hill so you want to limit the amount of trips!
