Meals on Monday – BBQ Honey Pork Ramen

This week we were lucky and pork loin was on major sale so we bought four which relates to around 8 meals for us! Today I am sharing one of my new favorites but I bet it would work with chicken too!

Sunday –

Dinner – Garlic Cream Cheese and Roasted Chili Stuffed Pork Loin, Rice, and Salad

Monday

Lunch – Hot Dogs, Salt and Vinegar Chips, and Tomato Salad

Dinner – Roasted Chicken, Potatoes, Brown Gravy, and Carrot Slaw

Tuesday

Dinner – Spaghetti and Meatballs (never got to it last week)

Wednesday

Dinner – Leftovers

Thursday

Dinner – BBQ Honey Pork Ramen

Friday

Dinner – Venison Cheeseburgers and French Fries

BBQ Honey Pork Ramen

Ingredients:

BBQ Sauce – Enough to cover pork loin

Pork Loin – We use about 300 grams / 1/2 lb  for two people

Honey – Enough to drizzle over the top of the pork

Ramen Noodles

Chicken Broth – 1 litre / 4 cups or enough to fill your bowl and cover the ingredients

Baby Spinach – To taste, I like more then Mr. H

Green Onions – To Taste as well

Optional:

Soy Sauce

Sriracha

What To Do:

Pre heat oven to 220 C / 425 F

Cover your pork in BBQ sauce and place in a foil lined baking dish

Bake the pork for 25 minutes then drizzle over the honey

Bake an additional 5 minutes then let rest

While the pork is cooking prepare your chicken stock, we use chicken bouillon cubes but you can used canned stock or whatever is easiest for you

Cook the ramen noodles to the package directions then divide between your bowl and cover with boiling stock

Add in spinach, sliced pork, and green onions

Serve with soy sauce and sriracha for those that like it spicy
